Aromas of sweet, ripe white peaches and sweetpea flowers are tempered by earthy notes of marigolds and chamomile flowers. A lean texture and boisterous acidity are matched by equally brisk flavors of fresh-cut grass, wet slate and tonic water served with a lemon twist. This would be outstanding with my zucchini risotto.
